Chef Doug Braselman

Chef Doug has been the owner of MeMe’s Bar & Grille since January 2023. He started his restaurant journey at Tre Yen in 2001, but not how you might think – he was a server! That wasn’t exactly a fit for him considering he was fired, but it would turn out to be for the best. The owner instead offered him a job as a dishwasher which started his long and successful career in the back of the house. After working his way up to cook, he moved to Cobalt restaurant in 2004. In 2006 he was hired by the Brennan Restaurant Group where he worked for four years at two locations, learning, and honing his skills. In 2010, he was hired at Emeril’s on Tchoupitoulas. He excelled at Emeril’s as a culinary leader and as a result was promoted to Head Chef at Emeril’s Orlando before being transferred back to New Orleans as Head Chef of Emeril’s. Braselman led the kitchen there until 2020 when the Covid pandemic left him and so many others out of a job. Thinking quickly, Chef Doug started a small at home fine dining business with three hospitality associates: The Furloughed Four. While maintaining one successful new business, Chef Doug also put in some time helping at MeMe’s Bar & Grill doing what he loves in the kitchen, as business slowly returned to normal. This led him to his latest business adventure at an absolute staple of St. Bernard Parish: Owner & Proprietor of Meme’s Bar & Grill. From the moment Rae Ann and Chuck Williams decided that they were ready to step down as the owners/operators of Meme’s Bar & Grill, Chef Doug was excited and eager to take advantage of such an amazing opportunity. Only the future can tell what’s going to come next on Chef Braselman’s amazing culinary adventure.

Sommelier Ray Gumpert

Ray Gumpert serves as the wine and service director for Meme’s Bar & Grille. Ray began his career in hospitality as a busboy at NOLA restaurant in 2000. He has held several different positions in his 23-year career in hospitality including Head Sommelier of a Wine Spectator Grand Award-winning wine program, General Manager of Emeril’s Flagship restaurant, and most recently one of the owner/operators of the private fine dining company-The Furloughed Four. Ray has worked side by side with Meme’s current restaurant owner Chef Doug Braselman for over ten years bringing food, service, and hospitality at the highest level possible.
